I can't possibly mention all of my favorite addins in this short space, but if there is something you wished Outlook did or did better, take a look at http://www.slipstick.com/addins/. You'll discover all kinds of utilities for Outlook, all of which improve on existing features or add functionally that Microsoft forgot.
